Our workshop is located in the heart of Old Nice, a stone's throw from the famous Cours Saleya.

This is the place where recipes are devised and fresh local fruit is transformed into delicious home-made jams. The process of making Baiata jam begins with the selection of the best seasonal fruit. The fruit is carefully washed, peeled and pitted if necessary. They are then cut into pieces and placed in large saucepans.

Sugar is added to the fruit to help release its natural juices and create a thicker texture. Sometimes spices, herbs or other ingredients may be added to give the jam a particular flavour. The mixture is then slowly heated over a low heat.

Once the jam has reached the desired consistency and texture, it is poured into sterilised glass jars. The jars are then hermetically sealed to ensure optimum preservation of the jam.
